- 250 g/8 oz flour 2 cups
- 10 ml/2 tsp baking powder 2 tsp
- 100 g/4 oz sugar 1/2 cup
- 1.25 ml/1/4 tsp grated nutmeg 1/4 tsp
- 40 g/1 1/2 oz butter,melted 3 tbs
- 1 egg 1
- 75 ml/3 fl oz milk 6 tbs
- oil for deep frying

- 1. Sift the flour, baking powder, half the sugar, the nutmeg and 2.5 ml (1/2
- tsp) salt into a mixing bowl.

- 2. Beat in the butter and egg, then half the milk.

- 3. Gradually beat in the remaining milk to make a smoothe but firm dough.

- 4. Chill for 15 min.

- 5. Roll out the dough to about 1 cm (1/2 in) thick.

- 6. Cut into 7.5 cm (3 in) circles and cut out the centres to make rings.

- 7. Leave for 10 min, then deep fry in oil heated to 190 C (375 F), for
- about 5 min or until golden brown.

- 8. Drain the doughnuts on paper towels and sprinkle with the remaining
- sugar.

- Note: the doughnuts may be shaped into balls, if you prefer.
